Pot-sticker carrots with bay leaves are made by caramelizing the carrots (without any added sugar, naturally from the carrots) and infused with aroma of bay leaves. Who says carrots are boring ?
I’m guilty of using carrots mostly just for stews, soups when it comes to cooking. Honestly, that’s because I didn’t really know what to do with them on their own. I love carrots though. They are so sweet on their own. This pot sticker carrots with bay leaves is an example of how the carrots are prepared without much fuss. This dish inspiration came from Jamie Oliver. The carrots are boiled until soft in the pan until the water dried up and start browning and caramelizing the carrots, results in really sweet and super yummy carrot dish. The bay leaves add a really nice fragrant to the whole dish!!!
Pot-sticker carrots with bay leaves(4 servings)
Ingredients
- 2 lbs of carrots peeled and both ends trimmed
- 6 bay leaves
- 1 tsp of cayenne pepper optional
- Pinch of salt and freshly ground black pepper
- 2 Tbsp of extra-virgin coconut oil or you can use butter
Instructions
- Cut the carrots into about 2-inch length. You will need a pot with a lid that is big enough to accommodate all the carrots placed in a standing position snugly
- Place each piece of carrot in a standing position. Tuck in the bay leaves in between the standing carrots. Season with salt, pepper, and cayenne pepper (if using)Add enough water to come halfway up to the carrots. Add in the oil or butter. Bring the water to a boil and then lower the heat to let it gently simmer for about 20 minutes or until the carrots are soft (but not mushy)
- Take the lid off and let it continue to cook until the water dries up, this will take about 45 minutes to one hour. The carrots will now start sizzling in the oil and the carrots will start to caramelize and start to brown, about 10 minutes. Be careful not to burn the carrots though. Once they are nicely browned, remove from the heat and carefully arrange on a serving platter or serve straight from the pot
